These no-bake treats are perfect for a summer time dessert, or snack on the go. Packed with nuts, seeds, fresh carrots and spices, this recipe is a two-bite delight!

Carrot Cake Energy Balls
Ingredients
- 1/2 cup dates soaked in hot water for 20 mins
- 1/4 cup hemp hearts
- 1/2 cup walnuts
- 1 cup carrots finely grated
- 3/4 cup rolled oats
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 2 tsp ground flax seeds
- pinch sea salt
- 1/4 cup shredded coconut
Instructions
- Add all of the ingredients (except coconut) into a food processor
- Pulse in the food processor until the ingredients are well mixed and a sticky batter forms
- Roll into balls (1 Tbsp each) and place on a tray
- Roll balls into coconut until they are well coated
- Store in a glass container in the fridge for up to 5 days, or in the freezer for up to 3 months
