These no-bake treats are perfect for a summer time dessert, or snack on the go. Packed with nuts, seeds, fresh carrots and spices, this recipe is a two-bite delight!

Carrot Cake Energy Balls

Ingredients
  

  • 1/2 cup dates soaked in hot water for 20 mins
  • 1/4 cup hemp hearts
  • 1/2 cup walnuts
  • 1 cup carrots finely grated
  • 3/4 cup rolled oats
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tsp ground flax seeds
  • pinch sea salt
  • 1/4 cup shredded coconut

Instructions
 

  • Add all of the ingredients (except coconut) into a food processor
  • Pulse in the food processor until the ingredients are well mixed and a sticky batter forms
  • Roll into balls (1 Tbsp each) and place on a tray
  • Roll balls into coconut until they are well coated
  • Store in a glass container in the fridge for up to 5 days, or in the freezer for up to 3 months
